Chantale's DIY Lemon Dandelion Cookie Recipe
Lemon Dandelion Cookies

Ingredients
• ¼ cup Coconut Oil, soft
• ½ cup unpasteurized Honey, liquid
• 1-2 Eggs
• 1 organic Lemon, juiced and a little zest or ¼ cup of Spruce Tip infusion (optional)
• 1 cup Almond Flour or Ground
• 1 cup Sunflower seeds, ground
• ½ cup Hemp Hearts, ground
• Pinch of baking soda
• Pinch of salt
• 1 cup (approximately) of Dandelion Flowers (To collect the dandelion flowers, pinch the yellow flower heads off of the green flower base. Save the yellow flowers for this recipe)
Instructions
1. Preheat oven to 375 degrees Fahrenheit.
2. In a large bowl mix together the coconut oil and honey together. Add together the egg(s) and lemon juice until well blended. Add the lemon zest.
3. In a small bowl, mix the almond, sunflower and hemp heart flour together with the baking soda and salt.
4. Add the flour mixture to the wet ingredients, and mix with a wooden spoon. The dough should be thick cookie dough texture- add more flour if need to thicken it up. Add the yellow dandelion flowers to the mixture.
5. Scoop 1-tablespoon mounds on a cookie sheet of your choice, spacing about 2 inches apart. I use a baking stone to bake my cookies.
6. Bake in the oven for 7-9 minutes (if using a baking stone bake for around 9 minutes, and other cookie trays may take less time) until golden brown and smelling delightful! Remove from oven and let sit for 5 minutes on the tray. Then let cool on cookie rack to cool completely.
